Quinoa is a grain originating from The Andes Mountains of Bolivia, Peru and Chile. The ancient Incas called quinoa the "mother grain". What makes quinoa such a great food is that it has a high protein content, which is unusual for a grain, i.e.: between 12%-18%. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids, making it an almost complete protein source. A food is considered a complete protein when it contains all the essential amino acids in the correct ratios.

Quinoa is an excellent source of iron, providing 15.7mg per cup. It is also a good source of fiber, phosphorus, magnesium, potassium and it is gluten free which makes it easier to digest.

Cooking food destroys a lot of the proteins, vitamins and enzymes. A way to minimize this loss and activate germination, which multiplies its vitamin and mineral content, is to soak the grains for about 5 hours and then cook them on low heat for 5-10 minutes. Quinoa is cooked in the ratio of 1 part quinoa to 2 parts water.
